Oh Little Lenties How I've Missed You So...

Remember how much I used to make Sloppy Lenties? Pretty much ever since Jennifer McCann posted about them for Shmoo's lunchbox and I went overboard for a while. Way more than I even posted about. I love my concoction of an adult-slash-kid version of the lenties and it's been a while since I've made them. Boy, did I miss those little bad-boys. I made them exactly the same as I always do (have the recipe memorized) and they were once again, wonderful. I thought it would be too hot and filling to eat these, but the Monsoon has rolled in (3 consecutive days of a dewpoint 55 degrees or higher) and it was a pleasant meal to have during a dust storm. No Seduction bread this time, this was some whole wheat something that was hard on the outside and soft inside and great for this dish. Oh, little lenties, it won't be for too long that we part again... (I'm a nerd).
And here's some blueberry ice cream pie. Sort-of. You see, this is supposed to look blue-er than it looks. I made a similiar pie to the amazing one I made last week but this time decided to make the guilt a bit less and add a shitload of blueberries to make it "healthier". It's not that it's unhealthy, come on, it's vegan, but there's something said about having ice cream pie for lunch three days in a row with no fruit filling. Hmm. List of ingredients in my pie: Arrowhead Mills already baked graham cracker crust, Soy Delicious cookies n cream ice cream, a few Newman's O's, maple syrup, hemp seeds, blueberries, almond butter, chocolate chips. Everything is organic except for the handful of chocolate chips. This pie is amazing.

I know these are two re-runs of many previous posts, but I felt because it's been a week since I've posted, I must post something, even if it's old material. Blogger withdrawl can only last so long.

I love this post! One of the reasons why I haven't posted in a while is because of re-runs too! LOL! I mean how many pictues of pizza, grilled sandwiches and cupcakes is anybody really interested in seeing??? So I say kudos to you! Enjoy your favourite food!

I *love* lentils - sloppy lenties sound delicious! Can you link to the recipe?

The ice cream pie looks amazing too. I have been wanting to make one, but my freezer isn't that cold so I am afraid it wouldn't set very well.

Lovely to see you and your lentils back! I still have a can of white lentils hiding in my cabinet. I will mention that my polenta log expired in January! It's nuts how long that was in my cabinets.

By the way, cookies and creme and blueberries sound like they can do no wrong!

I like dishes like sloppy lentils. It's such comfort food. That bread looks amazing. I'm a real bread lover. And blueberry ice cream pie! How can you got wrong? Have it for lunch? Sure! Why not? Great post Leslie. Glad you're back.

I don’t know where I was but I think is my first time running across the sloppy lenties? Maybe I vaguely remember them from the VLB. In any case, could you please take the guess work out and post a link to the recipe? I love lentils, these look so yummy! That pie does look really good too. I’ve been satisfying my sweet tooth with pure unadulterated fresh fruit lately. I’m munching on some chilled watermelon slices right now, I love summer!

For everyone, this is my modified version of the lenties. Feel free to change it up. Here's the recipe:
1.5c. red lentils, rinsed, drained
3c water
1.5-2c. tomato sauce (depending on how much you like tomato, use a jar or your own.)
1.5T tamari (soy) sauce
2 carrots, peeled, chopped
2 cloves garlic, small, chopped
1/2 white or yellow onion, chopped
a few handfuls of kale, chopped.
1t. basil, dried
salt and pepper to taste
pinch of cayenne or chili flakes

Bring water to a boil in a medium pot. Rinse and drain lentils and add them to the water. Cover and simmer (reduce heat). Add the tomato sauce and soy sauce and keep simmering.
I like to take the onion, garlic, carrots and kale and mince it in a food processor. I do this in 2 batches. Or just cut it and add to the pot.
Add the rest of the ingredients to the pot. Simmer for at least 30 minutes or until lentils are soft, while stirring every once in a while. Serve with bread or food item of choice.
Serves 3 or 2 very hungry people or 4 small servings, or just 2 with 2 leftovers.

It's kind of weird, once I make sloppy lenties I can't get them out of my head for a while. Until I make them too much! These are awesome and so simple to make (just one pot, a few tools and a bowl).

Julie, I'd love to go to Green. I have this new thing that I can't go there for lunch anyomore (or first meal of the day), it's just too much! Too filling, too amazing and it shocks my stomach during the daytime. I'd love to meet for dinner or somewhere (lighter) for lunch.

Great looking pie! I think of the the kids will soon try on e of those. I have to wait to get soy icecream though. I have to travel over 50 miles to get to the cosest store that carries it. Soon I will make the trip though.

Dori, this may sound terrible (and very urban-american), but if I lived 50 miles (or more than 1 mile, hehe) away from soy ice cream I would fall over and die. My body just wouldn't know what to do!
I actually can get it right next door a 1/4 mile away (bragging, sorry). Seriously though, I really would have major problems if I had limited access to it. Other things, I can survive! Ice cream is ALWAYS in my freezer.

Mary, being addicted to *good* sweets is great! It's the processed un-vegan crap that is bad. Go for 'em! And the lenties.

Kris, yep. I made my vow the other day. No more lunch there.

I recently came across your website and have had a lot of fun reading about your adventures. I'm currently simmering your recipe for sloppy lenties right now. YUMMY!!! I made your sloppy lenties with homemade whole wheat bread last night. Check out my blog for pictures (and you can also see a picture of my cute cat gobbeling them up as well). This was such a delicious meal. I'll defintely be making this regularly. I can imagine it a whole bunch of different ways also (in a pita, stuffed in a bell pepper or a tomato). Frozen pie sounds good too. My grandma just gave me a recipe for a pie(not vegan of course but I'm working on it)

Yes, I did see your version with quinoa. I'm going to have to try that next time. I'll probably just add them all together - cause I'm kind of lazy like that. We had this leftover again today and it was sooo yummy! It's a good thing I'm out of carrots because I'd probably make it again tomorrow.

Ok, I swear this is the last time I'm going to post about your lenties. My friend saw my blog about them and made them for dinner. here's the email she sent me: "just finished dinner!!!! it was delish, i added a bit more water and a red chili pepper from the garden as well as the jalapeno. tony is having 2nds as we speak, its after 9:00, i had to go to the store so dinner was late!!!! but delish, thank you!" they're so good - everyone loves them. thanks again!!!

You must be dieing heatwise as you haven't been posting. Tonight, I felt like you. It was 90+ outside and 80+ inside and I couldn't bring myself to cook.

I'm glad I checked out the comments tonight though because your recipe for the lentils is here. When it cools off, I will give them a try. They look yummy.

Savanna, don't steam the kale first. It will be in the whole pot of water, lentils sauce and everything else, so it will soften just fine! As for cutting it up, I like to "hide" my veggies sometimes so I put mine in the processor until it looked like small dried herbs. Don't blend too much though, you don't want puree. If you want to chop them large or small, it is really up to you. If they are large, they will shrink a bit in cooking. Does this help?

Plus, since you've never had kale before, I recommend trying it in here cut up somewhat smaller. If you want to try it plain, I suggest looking at Vicki's site (vegetarian family) because she uses it quite a bit in different variations. You could try steaming it lightly and have it plain, or if you want saute it in a bit of olive oil with some lemon juice and simple salt and pepper. You can even omit the oil. I really like kale with pine nuts and dried cranberries and some lemon juice and s/p. That's my favorite combo.

Savanna, oops. I would recommend you pulling the leaf from the stem. I do that, although I do leave some of the thinner parts of the stems on. There are many nutrients in stems. The bottom thicker part though is very fibrous, so you may not care for it. I'd just cut the leaves off. I'm lazy and I just tear them with my hands.
