There are many nutrients in stems. The bottom thicker part though is very fibrous, so you may not care for it. I'd just cut the leaves off. If you want to try it plain, I suggest looking at Vicki's site (vegetarian family) because she uses it quite a bit in different variations. You could try steaming it lightly and have it plain, or if you want saute it in a bit of olive oil with some lemon juice and simple salt and pepper. You can even omit the oil. I really like kale with pine nuts and dried cranberries and some lemon juice and s/p. As for cutting it up, I like to "hide" my veggies sometimes so I put mine in the processor until it looked like small dried herbs. Don't blend too much though, you don't want puree. If you want to chop them large or small, it is really up to you. If they are large, they will shrink a bit in cooking. Feel free to change it up. Here's the recipe:<BR/>1.5c. red lentils, rinsed, drained<BR/>3c water<BR/>1.5-2c. tomato sauce (depending on how much you like tomato, use a jar or your own.)<BR/>1.5T tamari (soy) sauce<BR/>2 carrots, peeled, chopped<BR/>2 cloves garlic, small, chopped<BR/>1/2 white or yellow onion, chopped<BR/>a few handfuls of kale, chopped.<BR/>1t. basil, dried<BR/>salt and pepper to taste<BR/>pinch of cayenne or chili flakes<BR/><BR/>Bring water to a boil in a medium pot. Rinse and drain lentils and add them to the water. Cover and simmer (reduce heat). Add the tomato sauce and soy sauce and keep simmering.<BR/>I like to take the onion, garlic, carrots and kale and mince it in a food processor. I do this in 2 batches. Or just cut it and add to the pot. <BR/>Add the rest of the ingredients to the pot. Simmer for at least 30 minutes or until lentils are soft, while stirring every once in a while. Serve with bread or food item of choice. <BR/>Serves 3 or 2 very hungry people or 4 small servings, or just 2 with 2 leftovers.<BR/><BR/>It's kind of weird, once I make sloppy lenties I can't get them out of my head for a while.
